Atole mixes cooked cornmeal and water with cane sugar blocks, which are called piloncillo. This makes a thin or porridge like drink. Cinnamon is then added, and other ingredients can produce the final result.

This results in sugar-cakes or loaves, called jaggery or gur in India, pingbian tang in China, and panela, panocha, pile, piloncillo and pão-de-açúcar in various parts of Latin America.
