Pizzelles have seen something of a renaissance in the past decade, as their flexibility in baking becomes more known.
Pizzelle is a crisp Italian cookie made from butter or oil, eggs, sugar, flour, and vanilla. The batter is cooked in a pizzelle iron, similar to a waffle iron, which has an intricately carved surface that imprints a floral design onto the cookie.

Every year I look forward to the tin of biscotti I receive from a friend; in addition, I like to make and give away the crisp Italian waffles known as pizzelle.
