Poached eggs have a solid white and runny yolk, and are delicious in salads, sandwiches or served plain with a touch of salt and pepper. Whether it's breakfast, lunch, or dinner, a poached egg is a great way to add protein and vitamin B to any meal.

 


Fortunately, there are many steps that can be taken to prevent contracting salmonella from a poached egg. The first preventative measure is to keep the egg refrigerated until it is time to poach it.

The classic way to serve poached eggs is on toast or atop the brunch classic Eggs Benedict: toasted English muffins topped with ham, poached eggs, and hollandaise sauce. Jim Dixon likes his poached eggs Italian-style, with cabbage.

A lovely way to serve a poached egg at dinner is to make a salad with a fairly acidic dressing. Perch the warm poached egg atop the salad and break the yolk. The rich yolk will blend with and become part of the dressing. Wonderful! ...

Cook as before but place a lightly poached egg on top of each slice of Welsh rarebit-as you cut into it, the yolk runs over the cheese mixture to give a rich golden orange colour and a wonderful combination of flavours and textures.
