concentrato di pomodoroTomato Paste or Tomato Concentrate. A thick deep red paste bought in tubes or cans used in small quantities to thicken sauces or give colour and to enhance flavour.

 


Pomodoro (It.): tomato; pomodoro con il riso, tomato with rice, a large tomato filled with rice and baked, with potatoes on the side, eaten, usually in summer, as a Primo piatto.

Sometimes called Salsa Di Pomodoro but more often called "Italian Gravy" by my Italian friends, this sauce is the start of many great recipes.
