Popover - a batter muffin that is puffy and almost hollow, it has risen so high. The ingredients are about the same as for Yorkshire pudding, and like Yorkshire pudding, the batter is poured into already-heated containers.

Popover pans are composed of cast-iron trays with tapered molds or individual molds made of heavy-gauge steel joined in a wire frame.

Yorkshire Pudding (YORK-sheer) - First cousin to the popover, this is a traditional English accompaniment to roast beef.

Yorkshire pudding is the ancestor of the popover. Popovers are individual Yorkshire puddings baked in muffin tins. Some recipes call for including herbs or garlic powder to flavor the pastry.

Physical leavens include water vapor, which is released as steam at high temperatures (as in popovers), and air, which is incorporated by beating.
