Prunes are actually dried plums (although prune is the French for plum), but the resemblance between the fresh and reconstituted dried fruit is not very obvious and they are not interchangeable in recipes.

 


Prunes are a dried type of plum, usually the oblong, sweet, European plum called d'Agen. The d'Agen has since been cultivated in the United States, and was frequently just referred to as a prune.

Prune - A dried plum. Traced back to Roman times, the prune is popular for its ability to store well. Commercial dehydration has replaced sun-drying as the method of producing plums.

Pudding - Like custards, thick, creamy mixtures of milk, sugar, and flavorings. Custards are thickened with eggs, puddings with cornstarch or flour.

The almond is the fruit of Amygdalus communis, a plant belonging to the tribe Pruneae of the natural order Rosaceae.

A vitamin-rich, tangy, prune-like pulp from the pods of a tropical Asian tree. Used as a flavoring in curries and chutneys, drinks, jams, and sorbet.

Prune-like and very sour. Also known in Malayan as mangosteen. Korma. To most restaurants this just means a mild curry. Traditionally it is very rich.

Pruning is the process of cutting back a tree or shrub. Done carefully, pruning can increase the yield of fruit; it is thus a common agricultural practice.

The greengages and prune plums are also varieties of P. domestica. Populations of plum trees that grow in the wild usually revert to the damson type.

Dried plums are also known as "prunes" but are marketed under the name of "dried plums" in order to assist in selling the product. Dried plums are good for eating out of the hand, as a stewed dish, or in sweet and savory dishes.

Dry food can be desiccated and withered like an old prune. Sometimes dry food keeps better, as beans and pulses; then being dry is a desirable trait. The dry weight -the solid part- in canned food gives you an idea of the real nutritional value.

Baked Apple a la Josephine - The soaked, pruned apples are boiled for 15 minutes. Boiled milk is mixed with rice, salt and sugar are added, and then it is cooled down and divided into four portions.

However, there are many other foods that also contain this chemical, such as roasted nuts, snack foods, taco shells, juices, such as prune juice that is processed at high temperatures, granola bars, cereal, and a variety of other processed foods.

Molehill: a dessert of almond-filled prunes coated and mounded with a light mixture of gelatin, whipped eggs, and whipped cream, then topped with grated chocolate.

It's good with fruits and vegetables, especially apples, prunes, peaches, pineapple, apricots, pears, pickles, spiced red cabbage and pulses.

Fruits change character completely when dried: the plum becomes a prune, the grape a raisin; figs and dates are also transformed.

Sugar Plum
A sweet, sugar-glazed, plum-shaped confection made from a combination of dried and candied fruits (prunes, cherries, etc.), chopped nuts. and spices. Also the stuff of certain seasonal dreams, and a species of dancing fairy.

Throughout the Mediterranean, a great many products were salted, as we see from the thriving business of salted fish in Languedoc--anchovies and eels--exported from the province of Toulouse, which also exported its prunes, saffron, and imported rice.

PRUGNA - Plumb. This fruit is commonly eaten fresh, stewed, or made into preserves and dessert pastries. Prugna secca refers to dried prunes.
