quatre epices (KAH-tray-PEES) - In French it means "four spices." It is a mixture of ground spices usually consisting of pepper, nutmeg, ginger, and cloves.
Quatre epices Quatre Épices is a spice blend used mainly in French cooking, but also found in the Middle Eastern kitchen. The name literally means four spices and contains roughly equal parts of white pepper, cloves, nutmeg and ginger.
Epice Parisienne (Fr.): see Quatre epices. Epicure (Fr.): a gourmet who gives special attention to the knowledge of food and wine and has developed a refined taste for it.
