Raft: A mixture of ingredients used to clarify consommé (see clarification). The term refers to the fact that the ingredients rise to the surface and form a floating mass.
Ragout (Fr.): Stew.

If you've ever heard a waitress in a diner cry out, "Adam and Eve on a raft, wreck 'em!" or, "Sweep the kitchen with Noah's boy!" you should be familiar with diner lingo.

Consommé - A clarified, highly flavorful broth served hot or cold. The broth is clarified using a 'raft' of egg whites during preparation. As the whites cook they attract the various sediments like a magnet.
