Welsh Rarebit with tomato soup is a winner for kids on cold evenings after school. Red Leicester cheese does the job just as well as Cheddar and gives a change of colour.

 


Rarebit - melted cheese poured onto toast. It is one of a group of dishes called ‘savory' sometimes served after the sweet at a formal English meal.

Welsh rarebit
A British speciality consisting of a slice of toasted bread covered with a mixture of cheshire or cheddar cheese melted in pale ale with English mustard, pepper and sometimes a dash of Worcestershire sauce.
