Cayenne pepper is used to describe almost any hot, finely ground red chile pepper, but it was named after several tropical varieties that originated in Cayenne in French Guiana.

A trademarked hot sauce that consists of red chile peppers, salt and vinegar. The small, very hot pepper originated in Tabasco, Mexico and the hot sauce was developed by the McIlhenny family more than 125 years ago.

NOTE: the dried red chile peppers ARE NOT hot peppers. You can use dried red New Mexico chile(warmer), California chile: Anaheim (milder) , or dried ancho (pasilla) chile if you can find them.

A short, dark green, tapered chile pepper with thick flesh. It is moderately hot and available fresh or canned. Dry, smoked jalapenos are known as chipolte peppers.
