Salsa:

Ingredients:
2 Tbsp olive oil
1 medium onion, finely chopped
1-1/2 stalks of celery, minced
2 Tbsp serrano peppers, seeded and chopped

4 medium tomatoes, seeded and quartered

For the mango salsa, in a separate bowl, mix together all of the mango salsa ingredients until well combined.

The ingredients for a basic homemade salsa include tomatoes, white onions, garlic, salt, lime juice or vinegar, hot sauce, cilantro and chili peppers. The sky is the limit for any other ingredients that you want to add to your salsa.

To make marinade, combine salsa, 2 tablespoons lime juice, honey, garlic and hot pepper sauce in small bowl. Thread shrimp onto skewers. Brush shrimp with marinade; set aside.

Add just enough salsa to coat the rice.
Add salt to taste
Add the same amount of water you would normally use to cook rice
Cook in pressure cooker.
Eat hot. Tastes great with veggie dips or yogurt.

I can't imagine Mexican salsa without it. Also, good for garnishing sweet soups, such as cream of corn, butternut squash and ginger, sweet yams, etc. Cilantro is good for many salads, especially ones with beans and avocado.
