A fish scaler is a kitchen tool which is designed to remove the inedible outer scales from fish, leaving soft skin behind.

To remove the scales from the skin of a fish using a dull knife or a special kitchen tool called a fish scaler.
SEAR
To brown meat or fish quickly over very high heat either in a fry pan, under a broiler or in a hot oven.

This can be done using a specialist fish scaler (similar to a small grater) or a serrated knife, it is quite a messy job so if possible do it outside or in a polythene bag or alternatively ask the fishmonger at Waitrose to scale fish for you.
