Scallopini alla bolognese is a meat gruyere recipe created of veal top round, eggs, butter, slices prosciutto, slices gruyere cheese, some white wine, and chicken broth.

Scaloppini, scallopine or scallopini (It.): thin, pounded piece of meat. Usually prepared by dredging the meat in flour, then sautéing and serving with a wine, lemon, or tomato sauce. Also called piccata.

Veal scallopine, which may also be spelled scallopini, is a fairly quick dish to prepare, since the thin slices of meat require very little cooking time.
