Sel gris (Fr.): salt, unbleached sea salt. Sel marin (Fr.): sea salt. Sel (gros) (Fr.): coarse salt. Selle (Fr.): saddle (of meat).
Salt is available in a variety of types, such as table salt, citric salt, fleur de sel and sel gris, kosher salt, iodized salt, pickling salt, sea salt, seasoned salt, and rock salt.
Sea salt: Salt produced by evaporating sea water. Available refined or unrefined, crystallized or ground. (Also sel gris, French for "gray salt.") Semolina: The coarsely milled hard wheat endosperm used for gnocchi, some pasta, and couscous.
There are several varieties. Gray salt = grey salt = sel gris gets its color from the clay lining the basins. La fleur de sel (the flower of the salt) is whiter, but has a similar flavor.
