semi-sweet chocolate = semisweet chocolate Equivalents: One cup of chips = 6 ounces; if melting the chocolate, chips and squares are interchangeable. Squares can be chopped up to make chips for cookies.

 


Semi-sweet chocolate:
Baking chocolate that contains between 15 percent and 35 percent chocolate liquor, cocoa butter, sugar, lecithin, and vanilla.

4 oz. milk chocolate pieces
20 to 24 plastic spoons
Melt semisweet chocolate over very low heat. Stir until it is smooth.

Semi-sweet chocolate contains at least 35% chocolate liquor, while some fine bittersweets contain 50% or more. Either chocolate possess a deep, smooth, intense flavor that comes from the blend of cocoa beans used rather than added dairy products.
