Also known as "Shanghai bok choy." Baby bok choy is available throughout the year. When selecting, look for firm stalks with crisp, fresh leaves. The cabbage should be used when fresh if possible because it does not store well.

BB (Bean Bran) Rolls: Crispy tofu skin wrapped with pork, shrimp and shiitake mushrooms with Malaysian white pepper served over a bead of steamed Shanghai bok choy.

The white stems can be sliced thinly and eaten raw. Look for firm stems and unblemished leaves. A smaller type is called baby bok choy or Shanghai bok choy. Keeps in refrigerator for one week. High in vitamins A and C.
