The term skate is used in Britain to describe almost any member of the ray family or Rajidae; especially the genus Raja. They have flat pectoral fins continuous with their head, two dorsal fins and a short, spineless tail.

 


Skate
Firm, white and sweet-tasting, the wings of this kite-shaped fish are showing up on more and more menus.
Skordalia
Potatoes, garlic, lemon juice, olive oil, vinegar, parsley and possibly breadcrumbs or nuts, blended into a sauce or dip.

Skate, also known as ray, is kite-shaped, salt water fish found world wide, of which the pectoral fin is used in cooking the traditional dish of skate in brown butter and other preparations.

Skate wings:
This is the edible portion of the skate. The flesh, when cooked, separates into little fingers of meat and has a distinctive rich, gelatinous texture. The taste is similar to that of scallops.

Description (in water): Two triangular, tapered "wings" (technically pectoral fins) give this unusual looking steel-gray fish, which is related to shark, graceful mobility as it seeks prey along the sea floor.
