When a skillet is new, even if it has been pre-seasoned, it should be re-seasoned more frequently than an older skillet. The more you cook on an iron skillet, the better the nonstick surface, as cooking itself seasons the inside of the pan.

Skillets: Sometimes referred to as a frying pan, a skillet is a long-handled, low-sided pan. Often the sides gently slope to allow steam to escape the pan. Large (10-inch) and extra-large (12-inch) skillets are most useful.

Select Your Skillet
A heavy-bottomed pan, which will heat nice and evenly, works best. A crepe pan isn't a requirement, but it definitely does the trick right. Find both budget-minded crepe pans and high end crepe pans at the Betty Crocker Store.

Pancetta
An Italian cured meat made from the belly (pancia) of the pig, the same cut used for bacon. Salted and lightly spiced, but not smoked. Available at Italian markets and delis.
