Scoring skin
Scoring duck breasts aids the release (or 'rendering') of the layer of fat between the skin and the flesh. When the meat is cooked, the melted fat can be poured off and stored for other culinary uses, such as cooking roast potatoes.

The milk forms a skin only on heated milk that contains fat. If you are heating skim milk, there is no danger of a skin forming on top. Because skim milk contains no fat, the protein molecules have nothing to bond with, and are unable to coagulate.

SKIN
To remove the skin from food before or after cooking. Poultry, fish and game are often skinned for reasons of appearance, taste and diet.

Silver Skin - A tough connective membrane found on cuts of meat where they attach to certain bones and joints. The silver skin must be removed before cooking.

Popiah Skin
Rice Paper Skin, Rice Wrapper
A circular, white paper-thin skin made from a mixture of flour and salt water. This is used to wrap meat and vegetables such as Popiah [Stewed Vegetables Roll] or spring rolls [Popiah Chnee].

Skin potato and cut into longish thin pieces.
Wash and keep aside.
Prepare seasoning in frying pan with red chilli bits and mustard in oil.
When mustard seeds splutter, drop potato pieces in pan, add 1 tsp salt and turn over well.

Skin potatoes and slice them as about finger thick (about 1 cm) slices. Put slices into pot and add some water (1/5 water of total level is enough, no need to cover them completely.

Skin and halve the kidneys, remove the white core completely. Mix together the mustard powder and Worcestershire sauce. Melt the butter in a saucepan over moderate heat.

To skin a fillet, place it skin side down on a cutting board. Holding the blade of a sharp utility knife almost flat, insert it between the skin and flesh at the tail end.
