Carpaccio is an Italian dish of raw, thinly sliced beef. Although the word has become greatly misused to describe anything thinly sliced (e.g. carpaccio of Thai-scented tuna), this is basically a pretension - true carpaccio is beef, nothing else.

SLICE : A cross cut 1/8 to 3/8 inch thick. To slice is to cut into even slices, usually across the grain.
CUBE : A cube-shaped cut ½ to 1 inch. To cube is to cut into cubes.

Slice roast across the grain.
If you are carving thinner cuts of meat, like beef brisket, slice the meat diagonally across the grain. This will give you a slice of meat with a larger surface area.
