Soba noodles are Japanese thin noodles made of at least 30% buckwheat. Since buckwheat has a tendency not to adhere closely, soba noodles also include regular wheat flower.

 


Soba noodles' shorter cook times can be both a blessing and a curse, however. Soba is far more unforgiving than spaghetti noodles, but the shorter times allow for some interesting tableside preparations.

Soba noodles are thin, flavorful, and generally light brown in color. They come in various sizes and colors, there's even a type made with powdered green tea called cha-soba.
