sodium nitrite - A salt used in smoked or cured fish and in meat-curing preparation. It acts as a preservative and color fixative. Can combine with chemicals in the stomach to form nitrosamine, a carcinogenic substance.

 


The curing compound typically includes salt, sodium nitrite, other nitrites, and seasonings that are rubbed on the surface of the meat.

Hormel also uses sodium nitrite to preserve the meat and keep the color pink, as it would otherwise gray with age. The use of sodium nitrite as a preservative is an ancient cooking trick, but it may be dangerous.

Sodium nitrate (not to be confused with sodium nitride or sodium nitrite) is the chemical compound with the formula NaNO3.
