also known as "sour salt." A white powder extracted from the juice of citrus and other acidic fruits (such as lemons, limes, pineapples and gooseberries). It's also produced by the fermentation of glucose.

Can be used for acidification as a "sour salt", similar to Sodium Citrate. Can be mixed with sodium alginate to form a gel.
