Coriander is probably one of the first spices used by mankind, having been known as early as 5000 BC. Sanskrit writings dating from about 1500 BC also spoke of it. In the Old Testament "manna" is described as "white like Coriander Seed.

Spices will have better flavor and a longer shelf life if you buy them whole--as berries, seeds, or quills--and grind them just before you use them.

Spices, both whole and ground, do have a shelf life, although it is longer than some people might imagine. Spices do not go bad in the sense of becoming rancid or spoiled, but they do lose potency and complex layers of flavor.

Spices and herbs are used in many different ways in the art of cooking. Interestingly, different cultures use different sets of spices and herbs to give the dishes their distinguishing taste and flavour.

Spices include stimulating condiments, e.g., pepper, mustard, and horseradish; aromatic spices, e.g., cloves, cinnamon, nutmeg, anise, and mace; and sweet herbs, e.g., thyme, marjoram, sage, and mint.

Spices are seasonings obtained from the bark, buds, fruit or flower parts, roots, seeds or stems of various aromatic plants and trees. Herbs and spices should be stored in air tight glass jars.

Spices with anise flavour are also known from other plant families. The best-known examples are star anise and licorice, furthermore some Thai basil varieties, tarragon and Mexican tarragon.
