Split pea soup is made using dried split peas. It is a popular soup made in many countries around the world. Depending on the color of the peas used, it mainly has a greenish-gray or yellow color.

Split peas - Green or yellow, and mealy when cooked. Good soup base.
Sponge - The portion of dough in bread-making containing all or part of the yeast, to which are added the remaining ingredients.

Dal - This is the Indian term for all varieties of dried beans, split peas, and lentils. There are many different varieties of dal, all of which have a specific use in Indian cooking.

Use split peas (which also come in yellow and orange) as a base. If there's no time for soaking, simmer split peas slowly in lots of water, seasoning with diced onion, carrot, celery and white pepper.

Dals (pulses)- dried split peas, usually bought skinned. There about sixty varieties of pulses available in India.

When you are making bean, split pea and vegetable soups, meat stews, spaghetti sauce, and chili, a Bay leaf can be added for a more pungent flavor. Alternate whole Bay Leaves with meat, seafood, or vegetables on skewers before cooking.

Daal: Daal is an Indian word, which includes dried peas, beans, and lentils which are red, yellow orange, or pink, plus split peas and other legumes. Daal can also be used to describe a soup like dish prepared with lentils.

Rasam, a thin, lemony soup made with toor dal, a type of split pea, is served as a starter in South Indian households. Purchase toor dal in Indian grocery stores and online, or look for gold lentils in natural food stores.
