Spreads:
Products in sticks or tubs that are less than 80 percent fat. They are not recommended for baking due to their water content.

 


Fruit spreads make excellent butter substitutes in certain baking recipes. They are often much lower in fat and can be used to replace butter and oil.

Sandwich spreads and fillings can be made from all kinds of vegetables. A favorite at our house is carrots, celery, dill pickles and sweet peppers chopped fine and mixed with mayonnaise.

Vegetable oil spreads are very mild in flavor and can be heated to high temperatures. This type of spread has been created as a substitute for butters that contain more calories, saturated or unsaturated fats, and higher cholesterol levels.

Baking: Dairy-free spreads and coconut oil both make good cakes and pastry although the flavour is not as good as with butter. However, check ingredients carefully as many 'dairy-free' spreads contain lactose, whey or casein.

It comes in low-fat and nonfat versions; these work well as spreads but compromise the flavor and texture of cheesecakes.

Blue fenugreek is not commonly used to flavour other types of cheese, besides bread spreads based on cottage cheese.

Vegemite is one of several yeast extract spreads sold in Australia. It is made from leftover brewers' yeast extract (a by-product of beer manufacture) and various vegetable and spice additives. It is very dark reddish-brown, almost black, in color.
