Sprouts - the young growth of any seed. Certain sprouts make tasty and nutritious salads, for instance, bean sprouts or alfalfa sprouts.

 


Spring onions
Also called green onions and scallions, these are immature onions which are pulled before the bulb has started to form and sold in bunches with the roots intact.

Spring onions are young, delicately flavored onions with a mild flavor. They are a welcome addition to stir fries and salads.

Preparation method
For the broth, pour the water into a large saucepan and add all the rest of the broth ingredients except the soy sauce. Turn down the heat and simmer for 20 minutes.

Chop the spring onions into ¼" pieces cut slanting. Pound red chillies and garlic coarsely.
Heat 1 tbsp oil, add chilli and garlic and fry for a minute. Add the capsicum and fry till tender. Add the spring onion and fry again for 2-3 minutes.

Wash the spring onions and trim back any green areas that are tough looking. Take of the root ends and then slice the remainder into thin rings.

Useful for slicing thin cuts of meat, it is also an effective and attractive way to cut asparagus, spring onions (scallions), carrots and cucumbers.

Green onions also known as scallions or spring onions, are a variety of onion harvested immature, before the bulb has fully formed. Both the green leaves and white bulbs are used raw or cooked.

On the foundation I use glazed baby carrots and spring onions and olives. The combination is still classic but the foundation is more modern and lighter on the palate. When I do a fish soup, I stay close to the classic recipe.
