Tahini (or "tehina"/"thina" in Arabic and Hebrew, "tahin" in Turkish, French, Dutch and Danish) is a paste made from ground sesame seeds. It is a major ingredient in hummus and other dishes from the Middle East.

Tahini is ground sesame seeds, generally without the hulls. Sesame butter is also ground sesame seeds, but generally includes the hulls. It has a nutty, slightly sour taste.

Tahini can be used to replace sesame paste in Asian cooking as well. Especially in Japan, sesame paste is used as the base for many dips and sauces, and it is sometimes used in soups as well.

They may be pitted and stuffed with fillings like walnuts, almonds, tahini or lemon peel. They are a good source of fiber, minerals, and antioxidants. Use them for sweetening fruit and nut desserts, pie crusts, puddings, and other treats.

They are added to many savoury dishes and sauces, used as condiment and garnish for breads and pâtisserie or ground into sesame paste (tahini). Many oriental candies and sweetmeats, like halva, are made with sesame seeds.

The result is crumbly, aromatic, and pilaf-like. It's called helva in Turkey, though it's not to be confused with another Turkish dessert called halvah, which is made with tahini and is fairly common in the U.S.
