A Cajun specialty, tasso is a lean, seasoned cut of cured pork.

 


TARTUFO - Truffles. These are part of the mushroom family, and are found underground near oak trees. They are firm, and irregular in shape, and have a very pungent, earthy aroma and flavor that is prized throughout Italy.

Tartufo is Italian for truffle; usually Italian tartufo bianco or white truffle from Alba.
Tartufo gelato is that chocolate coated, concentrically layered ice cream treat made to resemble a giant truffle.

Al tartufo (It.): with truffler.
Alto Adige Cabernet Merlot: this wine from Northern Italy shows an intense ruby red color and nuances of ruby red, little transparency.

truffle pasta = pasta al tartufo Notes: This is an egg pasta that's flavored with truffles. It's normally served with a cheese sauce.

Tartufo A chocolate ice cream dessert molded into a truffle. Tiramisú A sweet, rich, layered dessert made from sponge cake, and Mascarpone cheese, brandy, and Espresso. Shavings of chocolate or cocoa are sprinkled on top.
