Teff, also known as lovegrass, is an important food grain in Ethiopia and Eritrea, where it is used to make injera.

 


teff Notes: This Ethiopian staple is the world's smallest grain. Since it's too tiny to process, teff isn't stripped of nutrients like other, more refined grains.

Teff - a tiny, round grain that flourishes in the highlands of Ethiopia. While teff is very nutritious, it contains practically no gluten. This makes teff ill-suited for making raised bread.

Teff: fine millet flour. Tembo: palm wine.
Togwa: beverage made from fermented germinated sorghum.
Tseme or Nhembatemba: special pot used for storing Dovi (groundnut butter).

Teff flour Rich in calcium, protein and iron; sweet malty flavor. Use this gluten-free flour in quick breads, pancakes, and waffles. In leavened breads, use 5 parts wheat flour to 1 part teff flour.
