Thai eggplant Also known as Kermit eggplant, this variety is the size of a golf ball and features whitemauve skin with some green mottling. It is often used in red curries. For more information about eggplants, see our article.
Thai eggplants These golf-ball sized eggplants are more bitter than American eggplants. They come in different colors, but they're usually green mixed with yellow or white. They're often used in hot chile or curry dishes.
The ball-shaped Thai Eggplants range in size from a half inch to several inches in diameter, with an outer skin that may be colored white, yellow, green, or lavender.
The African eggplant is similar to the Thai eggplant in size and shape. Small in size, the eggplant may be smooth and round or evenly shaped with indented and rounded sections, similar to miniature pumpkins.
White, green, and striated versions of these cultivars are also available. Thai eggplants, on the other hand, are more spherical, and they also come in a range of colors.
Depending on the specific dish, red curry dishes include ingredients such as kaffir lime leaves, Thai eggplant, bamboo shoots, thai basil and some sort meat such as chicken, beef, pork or shrimp. Tofu can be substituted for a vegetarian option.
