Thuringer sausages are a German delicacy made of pork, beef or a combination of the two, seasoned with garlic, coriander, spices and flavorings and are dry cured and smoked with a soft texture.

Thuringer cervelat:

It is the key to making high quality semi-dry sausage with the traditional tangy flavors and is used in summer sausage, pepperoni, thuringer, etc. Accepted levels range from 1% to 6% depending on the desired result.

There are a number of varieties of summer sausage including cervelat style sausages, which include blockwurst, thuringer, and mortadella.
