Dragon Tongue Bean

A type of snap bean that is similar to the green bean with an editable pod, except the pod is flatter and has purple colored strips running down a cream background.

 


A dragon tongue bean is a flavorful, juicy bean which can be picked and used like a snap bean or allowed to mature into a shell bean. In either case, the beans have a delicate and beany flavor which some consumers greatly enjoy.

tongue Notes: Cooked tongue is lean, meaty, and quite versatile; it works well in sandwiches, tacos, and casseroles. To prepare it, boil it in a stockpot, then plunge it in cold water and peel off the skin and trim the base of gristle and fat.

Many tongues name oregano as 'wild marjoram', e.g., German wilder Majoran, Swedish vild mejram, Hungarian vadmajoránna, Polish dziki majeranek, Provençal majurano fero and French marjolaine sauvage and marjolaine bâtarde ('bastard marjoram').

The tongue is the large bundle of skeletal muscles on the floor of the mouth that manipulates food for chewing and swallowing (deglutition). It is the primary organ of taste. Much of the surface of the tongue is covered in taste buds.

On the tongue, I'm looking for a bouquet of harmonious flavors and nuances. Is it fruity? Well-balanced? Too bitter? Peppery? Earthy? Does it have a lingering, interesting finish? A pleasant mouth feel? Some olive oils taste too heavy and, well, oily.

Thin, translucent and jelly-like, they are made from the starchy root of a plant known in Japan as devil's tongue. They have a crunchy texture, but little flavor and are available fresh or dried. Store the fresh noodles in the refrigerator.
