A tube pan is simply an old-fashioned angel food cake pan. A round high sided pan with a hollow center tube. The tube helps with more even baking in the center of the cake. Another version of this type of pan is the bundt pan.

Tube pans, most commonly referred to as bundt or angel food cake pans, have a center tube that conducts heat, allowing cakes with thick batters to cook more evenly.

Tube pan - Ring-shaped tin for baking cakes. Most often used to prepare sponge cakes and angel food cakes.

Turn batter into a greased and floured 10-inch fluted tube pan. Bake in a 350 degree F oven about 1 hour or until a toothpick inserted near center comes out clean. Cool on a wire rack for 10 minutes. Remove from pan. Cool completely on wire rack.

Not many of these fluted tube pans sold until ten years later when the new Good Housekeeping Cookbook showed a pound cake that had been baked in one of them. Suddenly every woman wanted a pan just like it.

Tube pans are used for angel food cake; ring molds, for savarins and the like. Shiny pans are best for cakemaking because they reflect the heat and thereby produce cakes with tender crusts.

Make poundcake: Position rack in center of oven and preheat to 350░F. Generously coat inside of 10" decorative tube pan with softened butter. Sprinkle toasted almonds inside pan and press onto butter, sticking to sides and top.

Originally the trademark name of a tube pan with fluted sides, "Bundt pan" is now the general name of any of that style of cake pan.
