Tumeric - A bright yellow spice used primarily in commercial curry powder. It is also used in sweet pickles and for various dishes requiring a yellow color. This is used as a coloring substitute for saffron.

A good substitute for the yellow color is tumeric, though nothing can replace its unique flavor.

Other spices that go well with pea sauce include coriander, cloves, cumin, chili powder, tumeric, allspice and lemon. Use one or more of these spices, depending on the dish you are using the sauce with.

Turmeric comes from the root of Curcuma longa, a leafy plant in the ginger family. The root, or rhizome, has a tough brown skin and bright orange flesh. Ground Tumeric comes from fingers which extend from the root.
