Vanilla beans are from the aromatic pods of a variety of orchid. They are used to make vanilla extract and are used on their own as a flavoring.

Vanilla Beans are the long, greenish-yellow seed pods of the tropical orchid plant, Vanilla planifolia. Before the plant flowers, the pods are picked, unripe, and cured until they're dark brown. The process takes up to six months.

1/4 vanilla bean, seeds only (or 1 teaspoon vanilla extract)
Place all ingredients into the bowl of an electric mixer. Whip on medium speed until mixture is fluffy and homogenous. Serve with Blueberry and Lemon Thyme Scones.

History: It is not known with any certainty just how the vanilla bean was discovered as a flavor or how the techniques for processing vanilla were developed.

Vanilla beans are often distilled in alcohol to extract their complex flavors, and this extract is often used instead of natural vanilla beans when producing ice cream in bulk.

1 to 1-1/2 teaspoons (5 to 7 mL) Homemade Vanilla Extract: Combine 3/4 cup (175 mL) vodka and 1 to 2 split vanilla beans in a large glass jar. Seal and store in a cool, dark place for at least 4 months or indefinitely.
