As one of the most prized crops from Japan, this pale green root is grown in cold mountain streams under some of the most closely guarded growing practices in agriculture.

 


Wasabi is sometimes called Japanese horseradish, and its taste is very similar. However, real wasabi - wasabia japonica - is a relative of the watercress family and an elusive little root.

Wasabi paste ist made by grating fresh wasabi root on a grater to a very fine texture; most conservative cooks will use graters made from shark skin (samezayano-wasabi-oroshi ["皮のワサ"おろ-]), yet metal graters are also in use.
