How to Grill a Whole Turkey
What could be more appealing than the crisp skin and juicy interior of perfectly grilled turkey? Why does it seem so hard to achieve?

6. A whole turkey is done when the temperature reaches 180°F. The thigh juices should run clear (not pink) when pierced with a fork and the leg joint should move freely.

To thaw a whole turkey in the refrigerator, you allow 1 day for every four or five pounds, so we'd set aside two days for such a large turkey breast. It may not take the whole time, but it's better to have it thoroughly thawed than icy in the middle.

When you purchase a whole turkey, chicken, or other type of poultry carcass, the giblets will often be sealed in a plastic bag that is placed inside the carcass's cavity.

Notes: Markets often sell whole turkeys at bargain prices during the holidays, using them as loss leaders.

Frozen whole turkeys remain popular. Sliced turkey is frequently used as a sandwich meat or served as cold cuts. Ground turkey is sold just as ground beef, and is frequently marketed as a healthy beef substitute.

Try rubbing the blend on whole turkey or the breast before roasting. Rub beef, lamb or veal with olive oil, season with salt and pepper, then press the herb blend into the meat.

Sprinkle salt and pepper, if desired, over the top of the whole turkey. Add a dusting of garlic powder and onion powder. If you use onion salt, do not add additional salt. Coat the turkey with about one tablespoon of softened butter.
