Wine vinegar is also wonderful in sauces. An Italian sauce that dates back to the Middle Ages, called "agliata," or garlic sauce, is made from six cloves of garlic, an ounce of bread, and 3/4 cup red wine vinegar.

Ask yourself this: if you had mistakenly bought white wine vinegar instead of white wine, would you consider making the substitution? A wine vinegar is wine that has been soured naturally or artificially.

Wine vinegar: The very best wine vinegars - white or red - are still made using the ancient Orléans process, requiring a lot of patience. Some commercially produced wine vinegars are not made from wine at all but from yeast fermented grape juice.
