Winter melon (tung gwa)
A large light green melon with a white powdery surface resembling a water melon. The inside is white with seeds in the center. Usually sold in sections. Peel hard skin and discard seeds. Slice melon and use in soups.

One famous dish of this kind is called the Winter melon urn (冬瓜盅). It is prepared by emptying the inside of a winter melon to make an urn. The outside of the winter melon is often carved with artistic patterns.

Winter melons have a light green skin and are served cooked, sometimes in a soup. The winter melon tastes similar to a zucchini. A casaba melon is round and yellow with deep creases and has a taste similar to a cucumber.

However, while zucchini is a type of squash, fuzzy melon is a gourd, related to winter melon. Fuzzy melon is used in a number of dishes such as soups and stir-fries. It can also be filled and steamed.
