Wire rack
A metal rack with feet to raise it slightly above the surface on which it is placed. Wire racks are invaluable in baking to allow freshly baked cakes, loaves and biscuits to cool before storing.

Wire rack.
Cake Flour, Pastry Flour:
A fine-textured, wheat flour with a high starch content used for making cakes, pastry doughs and other tender baked goods.

Place wire rack in wok. Add water to 1 inch below rack. (Water should not touch rack.)
Cover wok; bring water to a boil over high heat.
Arrange ingredients on heatproof plate. Place plate on rack in wok.

Cool on a wire rack and dust with icing sugar to serve.

Cool in pan on a wire rack for 15 minutes. Using a sharp knife, loosen the crust from sides of the pan; cool for 30 minutes more. Remove the sides of the pan; cool cheesecake completely on rack. Cover and chill for at least 4 hours before serving.

Cake Rack: Also known as cooling racks are a open metal wire rack used to cool baked goods like cakes and cookies, after they have been removed from the oven. Cake and cooling racks are available in round or rectangular shapes.

Cool on wire racks. Makes 6 dozen.

TIP: Remove baked bread from pans and cool on wire racks to 90 to 100˚ F. internally. Wrap and store.

Kettles are large, heavy, enameled or stainless-steel pots with tight-fitting lids and fitted wire racks that hold filled canning jars securely in place while they are boiled.

Take from the oven, put on a wire rack and immediately pierce the base of each shape with a skewer to let out the steam. Leave base up for a few minutes until the pastry cools and then turn over to allow them to finish cooling completely.

Leave to cool in the tin for 10 minutes then turn out on to a wire rack to cool. Serve in wedges or slices, spread with plenty of butter. This cake will keep in an airtight container for up to 3 days.

At the end of the soaking period, remove the fruit from the syrup and arrange it on a wire rack over a tray. Dry in a warm place, in the oven at the lowest setting, or in a dehydrator until the surface no longer feels sticky.

These are generally made of silver, and instead of wire racks, the chafing dishes sit on a platform with tapered legs. These are more esthetically pleasing than the chafing dishes provided by the casual caterer.

Let Stand To let baked or cooked foods cool down on a wire rack or hot pad wile it's still baking/cooking.

Bake at 375 degrees F for 20 to 25 minutes, or until a toothpick comes out clean. Cool for 10 minutes before removing from pans to wire racks.

Set covered bowl in a warm, draft-free place. You can also place the covered bowl on a wire rack over a bowl of hot water, or in a microwave beside a cup of steaming hot water (don't microwave the dough).

Steaming: Cooking food with the steam of boiling water. Usually this is done in the microwave, with an electric steamer, in a double boiler, in a traditional bamboo steamer, or on wire rack placed above the water level.

Bake at 375 degrees F for 15 minutes or until golden brown. Immediately press gingerbread cookies around edges of cookie crust. Cool on wire rack. Remaining cookie dough may be baked for cookies as directed on package.
