A large game fish (up to 100 pounds) from the jack family with a flavor and texture resembling tuna. May be prepared in any manner suitable for tuna.

Fish-yellowtail, marlin, skipjack tuna, salmon, trout, and mackerel-is mainly used in Japan, while meat-chicken, pork, lamb and beef-is more often used in the West. Other ingredients sometimes used in Japan include konjac and squid.

Yellowtail fish is hamachi. Of course, sashimi is not exclusively fish. Squid, or ika, and tako which means octopus, are also types of sashimi. While sashimi is almost always a raw dish, shrimp is often served in sashimi as a cooked addition.
