ZAMPONE - This is a specialty sausage from Modena, and is a pig's leg stuffed with minced pork shoulder and other cuts of meats. It has a unique flavor and is quite fatty. It is commonly served with stewed lentils as a side dish.

Zampone:
A specialty of the town of Modena in northern Italy, this consists of a hollowed and stuffed pig trotter which is poached and served as a part of a traditional Bollito Misto.

Cappello da Prete An expensive Italian sausage (because of its lengthy and complicated production process) made from meat stuffing similiar to that of zampone but wrapped in a very thin rind from the intestines of the pig. It is served like zampone.

Often stewed with vegetables as a side dish, or made into a salad, they also are served with zampone or cotecchino.
Lentilles (de Puy) (Fr.): lentils (prized green lentils from the village of Puy in the Auvergne).

Bollito Misto - An Italian stew consisting of various cuts of meat, including zampone, boiled in a rich broth with vegetables. The whole dish is served with cornichons, pickled onions and a variation of chutney called mostarda di Cremona.
