Topical collecting is the best of all, to me. One can still collect stamps of many countries, which I enjoy for the variety of styles and contexts, yet the volume of stamps is not unreasonable. Below are examples of a few topical areas.

Topical Collections - Another very big way to collect stamps is to build collections around a particular theme. This could be any theme, ranging from birds to Disney stamps. Many people will collect topical stamps for areas of interest to them.

Topical philately is the study of what is depicted on the stamps. There are hundreds of popular subjects, such as
People on stamps
Maps on stamps
Birds on stamps
Ships on stamps
Stamps on stamps ...

Torn stamps - a slightly torn specimen, which does not show damage when on the album page, is admissible by many collectors as a temporary space-filler, ...

TOPICALS: Stamps which all have a common theme, such as animals, flowers, etc.
UNUSED STAMPS: Stamps which have
never been used for postage, but may have one or two small flaws. Mystic sells stamps with small flaws at a significant discount.

Topical or Thematic. A stamp or piece of stationery showing a particular subject; i.e., horses, birds, pandas, automobiles, athletic events, etc.

Topical: Stamp or cover or pictorial postmark showing a given subject. Examples are flowers, art, birds, elephants or the Sydney Opera House. Similar to ‘thematic’ above.

You may select a topical collection such as Birds, Ships or Space to name but a few. I suggest you start with the country you live in.

Topical stamp collecting - many collectors choose to organize their philatelic collection on the theme of the stamps, covers, or postmarks. Popular topical themes are animals

Some people like collectors stamps by the country (traditional), and some by the design on the stamps (topical), while some people collect many copies of just one stamp issue or just one type of stamp (specialist), ...

As for the future of philately, the new definitive series featuring wild animals will appeal to topical collectors around the world, especially to children.

Some people like to collect stamps of maybe any one country or lots of countries, but which are all of the same subject, or topic. Sometimes, these collections are called "topicals".

Thematic(Topic) The collecting of one subject on stamps, e.g. birds, mushrooms, computers, space, etc. Also known as Topical.

Such limiting of collecting to the pictures on the stamps leads to one of the most fascinating forms of collecting - the "subject" or "topical" collection. Here one collects according to pictures on stamps that have relation to the subject at hand.
