AI Servo AF
AI Servo AF is an auto-focus mode that continuously focuses on a subject -one that is moving -- until you find that decisive moment to snap the picture.

In this mode the camera constantly refocuses on a moving subject. If the subject is moving at a constant rate towards or away from the camera the focus system will 'predict' the new focus distance.
AI ("artificial intelligence") servo mode.
In this mode the camera tries to keep refocusing the lens as you track your subject.

Continuous/AI Servo
This is more suited to moving targets, such as sports or wildlife subjects. The main difference between this and one-shot autofocus is that the lens continuously focuses on your subject.

Thankfully, most cameras feature continuous focusing, also known as AI Servo. This mode will allow you to continually focus on moving subjects.
You can either use focus tracking (AI-Servo mode) or single shot which may be better if you know what you are doing, since tracking is not perfect.

Continuous Servo AF Focus or AI Servo:
Autofocus term used, the AF sensor detection continues as long as shutter release button is lightly pressed and the reflex mirror is in the viewing position.
Another tip for focusing on a subject moving closer or farther if your camera has the feature is setting the autofocus to AI Servo in the menu. The Canon Rebel XT does have this feature: Menu 1 > AF Mode > AI Servo > Set.

With the SLR (atleast canon) you need to set the focus mode to single (AI or AI Servo doesn't work) think that is the reason canon says use Manual focus.

I should have used 'Evaluative' or the actual 'Center weighted Averaged' auto exposure metering mode. Also worth noting is that I probably would have been much better off using 'AI servo' mode for the auto focusing mode.
