Most serious photographers use their flashguns in manual mode, so that they have full control over lighting.

By casting a shadow with your finger/hand you can prevent the flash from over lighting the subject and ad ambient light around.

Whilst recording the exposure is dynamically altered as the scene brightness changes (unless you hold down the AE lock button), and you cannot lock the aperture - making depth of field control difficult unless you have total control over lighting.
