Time-lapse photography is a cinematography technique whereby each film frame is captured at a rate much slower than it will be played back. When replayed at normal speed, time appears to be moving faster and thus lapsing.

Time-lapse photography is where a still camera is used to make a bunch of photos over a period of time, and later they are collected into a completed video or film clip.

This is called time-lapse photography although officially the term is used to denote taking moving pictures at any rate slower than the standard 24 frames per second currently used in the movie industry.
Security cameras often also work in this way.

I did time-lapse photography rather than video for those by having the intervalometer on the camera body fire every five seconds. It's math. I literally broke out a calculator.

The technique of time-lapse photography is particularly effective at speeding up imperceptibly slow processes like the blooming of a flower or the subtle blush of fall foliage.

This function is part of most better quality remote shutter releases. It allows you to preset multiple points in time when you want the shutter to release during time-lapse photography. The intervalometer then trips the shutter automatically.
