Butternut Squash
With a smooth, buff-colored outer rind and distinctive gourd-like shape, the butternut squash is easily recognizable. Butternut squash tastes similar to pumpkin but has a smoother texture.

LEAVES: Alternate, compound, leaflets 11 to 17, each 3"-5" long, small-toothed; dark yellow-green above, paler, hairy below; end leaflet same size as side leaflets; main leaf-stem with conspicuous sticky hairs.

Butternut is a winter variety, one of the squashes with hard exterior shell and large, hard-shelled seeds. Because of their thick rind they can be stored for several months unlike their relatives, the thin skinned summer squash.

'Butternut' Winter Squash has been bred for early-maturation in cool climes. Its flesh is firm and sweet. They will tolerate partial sun and require high organic matter and well drained soil. Go easy on the fertilizer as you will end up with all vine.

---Medicinal Action and Uses---Butternut is a mild cathartic like rhubarb; it does not constipate and is often used as a habitual laxative, also for dysentery and hypatic congestions.

The butternut, or white walnut (J. cinerea), of approximately the same range as the black walnut, has a sweet and oily nut that is gathered locally but is not of commercial importance.

A number of butternut squash seeds from the compost bin volunteered to produce a crop. When the vines were several feet long, they began to produce blossoms where the leaves stemmed from the main vine.

The butternut squashes and tatume are largely immune to the squash-vine borer, and the zucchinis and yellow crook-necks develop so fast you can get a crop before the vine borers kill the plants.
