One of the earliest herbs to come up in spring, chives, 'Allium schoenoprasum', are an attractive garden plant and versatile herb in the kitchen. They are an easy-to-grow perennial with pompom-like lavender flowers in late spring.

A hardy perennial plant, garlic chives (Chinese Chives, Nira) are commonly used as a herb in stir-fry cooking . The flat, dark green, grass-like leaves have a flavour somewhere between garlic and onion.

Chives are native to Siberia and Southeast Asia. Folks over there just could not keep this wonderful herb a secret. As a result, chive plants are commonly grown by the majority of home gardeners.

In quite many languages, chives are denoted as a grassy variant of their larger relatives, leek, onion and garlic.

The purple or white pom-pom flowers of chives top aromatic stems in summer. The leaves are edible and have a mild onion flavor; the flowers can be used as garnishes. Plants grow in dense clumps to 2 feet high.

My all time favorite way to eat chives is on top of a baked potato with sour cream. In addition, I take the leaves and cut them into small pieces and place them in ice cube trays, fill with water and freeze.

A close relative of ordinary chives and used in just the same way to flavour cooking, garlic chives have flattened strappy leaves and a pleasantly garlicky taste, particularly when leaves are snipped off young.

Here you will find information on plants with culinary or medicinal uses. Included are species used in cooking such as basil and chives, as well as varieties with medicinal properties such as chamomile and echinacea.

The new shoots that appear will have a mild garlic flavor and can be used in the same manner as regular chives.
