Colocasia esculenta 'Fontanesii' (Black Taro) - A tender herbaceous perennial that holds large dark green heart-shaped leaves on dark purple (almost black) stalks. Grows 4-6 feet tall and about 5 feet wide in wet soils or shallow water.
Colocasia esculenta, or Taro, is widely grown in the tropics for food and as an ornamental planting. The edible tubers are used in Poi and the young shoots are blanched and used as a winter vegetable.
Colocasias are often called elephant ears; however, when I lived in Hawaii we knew these evergreen, big leaf plants as taro. Grown as a vegetable food, taro must be cooked or steeped in water to remove the toxic calcium oxalate before it's eaten.

This family includes philodendron, colocasia, caladium, alocasia and other very tropical foliage plants. Like these other aroids, xanthosoma thrive in an environment of high humidity, copious water and food, and elevated temperatures.
Colocasia, on the other hand, should be kept continually moist and can be grown submerged in a shallow pond up to 15 centimetres deep. Xanthosoma, meanwhile, prefers consistent moisture, but will tolerate occasional dry periods.
Description: Also known by the scientific name of Colocasia esculenta, Elephant Ears has long been popular as a containerized or planter annual that is prized for its huge, bold-textured foliage that resembles an "elephant's ears".
Apparently, the plant makes a short rhizome somewhat like a caladium, not the upright trunk found on Alocasia macrorrhizos (Elephant Ear) or the large fleshy tuber of Colocasia esculenta (also called Elephant Ear).
They are often known by the common name elephant ear (which they share with the closely related genera Alocasia, Colocasia, and Xanthosoma), Heart of Jesus,[2] and Angel Wings.
